I use something called "Odd Jobs" to do this.  It's a shareware
program that lets you create little file-processing "joblets" (droplets)
to do a variety of tasks.  Several joblets come with Odd Jobs 
and it is pretty easy to make new joblets.  A joblet to convert line 
endings to Mac format is included, and can be easily modified to
make joblets converting to Unix and DOS formats.

I have no idea how well Odd Jobs works under OS X, if at all.  I
have used it without problems under OS 8.1 and OS 8.6 (mostly the
latter).

No connection to the author of Odd Jobs, just a satisfied user of some
