Configs belong into SCMs like GIT or SVN in my opinion, which easily
allows to have additional backups and/or clones/working copies at
admin/developer PCs. My data is (mostly) backed up offsite using
RSYNC to some private NAS as well.

I additionally store those in KeePass, which is 1. stored on a company
share and using triggers additionally privately at the PC of whoever
updates that database.

Paper is not very reliable, can't exist easily multiple times at
multiple places etc. I wouldn't rely on that and spread files instead.
