Yes, I do that on a weekly basis.

OK, I think that's what I'm going to do for now. I'll simply set up a
second repository and make backups to both. That should be enough to
help against a corrupted data chunk in a single backup target.
In my case, the total amount of data to be backed up weighs a few 100GiB
and therefore takes some time to back up as a whole, but the amount of
data that changes over time is comparatively small. So daily backups
with borg are pretty fast and it won't hurt to do them twice.
