they are coming addressed to test-bounces@mackinlay.demon.co.uk but are
being deposited into my mailbox whixh is the default for root and
anything else not addressed to a user with a postbox.

Correct - this is what they look like
|test-bounces  "/usr/local/mailman/mail/mailman bounces test"
