My two cents worth...

The usual feedback I get from subscribers is the inability for them to find
the way to unsubscribe.

Would it be beneficial to emphasize the Unsubscribe process on the
listinfo/<listname> page by adding a special heading and button for
Unsubscribe similar to "Using <listname>" and "Subscribing to <listname>" ?

Is it doable in 2.1?

The "Edit Option" button could be viewed by novice users for changing
options, where unsubscribing is not an option since you are just leaving
the list.

A left menu columns or a top menu on the listinfo/<listname> page would be
very beneficial for navigation.
