When you do volunteer work for an orgnaisation even if its NGO, legally the
organisation is the first owner and in turn hold the copyright for the work.

Adding a FAQ here from the website for your reference as well:

*Who is the owner of copyright in the work of a public undertaking? *

In the case of a work made or first published by or under the direction or
control of any public undertaking, such public undertaking shall, in the
absence of any agreement to the contrary, be the first owner of the
copyright therein.
