[Borgbackup] advice on restoration

hello to all
I have to restore a large amount of data (~ 1To) from a borg archive
according to you, in term of duration, Is it better to do it with
$ borg mount ... then cp or scp towards the NFS target disk volume
or with
$ borg extract
or is it the same thing?
II/ 2nd question
I have already tried with borg extract but unfortunately, there have
been a network problem and the restore process failed before the end
So Is there a way to restart the restore without restoring the data that
has already been recovered (a kind of restore rsync between the archive
and the target disk)

any advice is welcome for this restoration process
