string.replace() returns the result and leaves the original untouched.
So, what you want is
unformat = quote[11]
unformat = string.replace(unformat, '<B>', '')
...
or
unformat = quote[11]
for i in ('<B>', ...):
unformat = string.replace(unformat, i, '')
