This is one of their ideological hot buttons - you're not supposed to WANT 
to turn them off. :)

Back in the real world - go to $base/Mailman/Handlers/CookHeaders.py - down 
in the last few lines - and look for a line saying

	msg[h] = v

Comment that out with a # at the beginning of the line, and the headers are 
toast.  I never bothered to code a fancier patch to let you control it list 
by list in the web interface, but that's a doable project.
