This feature already exists at the list level.  On the "Privacy Options"
page of the web admin interface, turn on the "Hide the sender of a
message, replacing it with the list address (Removes From, Sender and
Reply-To fields)" option.  If you want it at the individual message level,
though, you'll have to do some hacking.
