You asked how to control the return address on outgoing mail and I told you
how.  Your new batch of questions are all non-mailman-specific and are
related to general mail and web server setup issues.  They also have no
effect on outgoing mail, only incoming traffic.  Since you asked about
configuring how mailman sends outgoing mail, I assumed that you had already
taken care of them.

Anyhow...

The DNS records only affect incoming traffic.  If you want the lists to
receive incoming mail on different virtual hosts, then yes, you need to set
up an A record for each hostname receiving mail with MX records pointing at
your mail server.

For the web interface to mailman, you can actually run all of your lists'
admin interfaces from a single hostname, so no, mailman doesn't require that
anything be set up in DNS or that you set up virtual hosts in apache.  It
just makes things more convenient.  (If I wanted to, I could set up a
mailman-users list on my box that directs replies to python.org.  It would
confuse the hell out of people trying to use it, but mailman would neither
know nor care that it's running on a machine with no connection to
python.org.)

You only need one reverse-lookup per IP address.  This is a Good Thing,
given that you can only have one per IP address.  The reverse-lookup tables
map IP address to (canonical) hostname.  If there's only one address, it only
maps to one name.
