I wrote a script for this called stripmime.

I put it before the wrapper script in my /etc/aliases.  Here is an 
example:

classicrendezvous:       "|/usr/local/bin/stripmime.pl|/usr2/local/mailman/mail/wrapper post classicrendezvous"

It strips all attachments besides plain text.
