Q1: There is an option on the admin pages to restrict posting rights
to people in the list of emails you give it.  Fill that in with the
names of your admins.

Q2: That's not a great idea, because a lot of mail you wouldn't expect
will end up going back to the list (such as bounce messages from MTAs
that don't support The errors-to header).  The -admin prefix was
carefully considered; you should think really hard before changing it.
If you still want to change it, you'll have to hack the source.
